Full Wash Process
1. Harvest
Harvest season in Bail is from May to August.We hand pick only the ripe cherries one by one.
2. Wash
We use the holy water to wash those cherries 3 times, picking out each time cherries that float on the surface, stones, leaves, etc. Because “Full Wash” process goes throught this step, it’s easier than Natural process to stailize the quality.
3. Pulp
Pulping is a step where skin and seed are separated.The skins are used to make organic fertilizer for the farm and to make cascara tea.
4. Ferment
Fermentation requires sugar and water. Mucilage has enough sugar content to generate a mild fermentation by itself while some kind of enhancer is commonly used as well.In our farm in Bali, we use natural yeast made from locally grown fruits and organically made coconut sugar.
5. Sort
Fermented and thoroughly washed seeds are placed on African beds to dry naturally. We stir the seeds on the beds repeatedly everyday.
6. Dry
We stir the seeds on the beds repeatedly everyday.
7. Hull
Once the moisture content becomes between 8 and 12 percent, we remove the seeds (perchments) to sacks to mature them for about one month. Hulling is done right before shipments so that the freshness is guaranteed.
8. Sort
After hulling, the beans are sorted 3 times to ensure that all bad beans can be sorted out.
